Our Story

A bakery built on conviction, not convenience

Red Wheat Baking Co. started with a simple insistence: bread should taste like bread. Not like a factory output, not like something engineered for shelf life — but like something alive, something that required a baker's attention from the first mix to the final bake.

We opened our doors on Wyandotte Street in Kansas City's Crossroads neighborhood, where we've been baking for the community ever since. Every morning, our ovens fire before dawn. Every loaf carries a story written in its crust — the story of time, temperature, and a kind of care that refuses to be rushed.

That's why our sourdough isn't just a trend we followed. It's the foundation of everything we do.

Our menu shifts with the season and the grain. What stays constant is the standard: every item leaves our kitchen only after it passes our own table.

Country Sourdough

The Process

The hours between mix and crust

Great bread can't be hurried. Here's what happens before your loaf reaches the counter.

The Build

We start with a mature sourdough starter, fed daily. Flour, water, salt — nothing else. The dough rests, ferments, and develops flavor over 12 to 18 hours.

The Shape

Each loaf is hand-shaped after a gentle fold — never overworked. It proofs in a banneton, developing surface tension that becomes our signature crackling crust.

The Bake

Into a preheated stone oven, straight from proof. Steam in the first minutes, then a long bake until the crust reaches deep amber. Cool before slicing — always.
